Characteristics of Vanilla
Vanilla is a plant with a climbing fleshy stem and produces aromatic woody fruits, 10cm - 20cm long. It belongs to the Orchid family. There are over 100 different species, the best known of which is Vanilla planifolia. This species is used in the food industry, mainly as a flavoring and in the production of cosmetic products.
The plant grows in a tropical climate, in sunny places and fertile soil. Its height can reach 3 meters. The flowering period lasts 2 months with gradual development of the flowers. The vanilla flowers, white or yellowish, are large and impressive, of a delicate texture, in contrast to its leaves which are thick and resistant. At the end of flowering the flowers turn into fruits that resemble green beans. The ripening period of the fruit lasts 9 months. Once the fruit has passed the stage of hardening and drying
It changes color and develops the enzymatic processes that lead to the birth of the characteristic aroma and flavor.
History of Vanilla
The first people to domesticate vanilla were the Aztecs of coastal Mexico, who considered the plant sacred, believing it to be a gift from the gods. For many years, the flowers decorated temples and were placed at the entrance to homes to bring good luck.
Subsequently, vanilla began to be used in various beverages prepared by the people of the region, and in 1500, vanilla first traveled to Europe, heading to Spain. There, its exploitation in food production for its aroma and flavor began.
The well-known Bourbon vanilla, which is widely available on the market, took its name in the early 19th century from the island of the same name that produced it.
The cost of vanilla is ranked among the highest worldwide, coming in second behind saffron.
