Characteristics of Vanilla
Vanilla is a plant with a climbing fleshy stem and produces aromatic woody fruits, 10cm - 20cm long. It belongs to the Orchid family. There are over 100 different species, the best known of which is Vanilla planifolia. This species is used in the food industry, mainly as a flavoring agent and in the production of cosmetic products.
The plant grows in a tropical climate, in sunny places and fertile soil. Its height can reach 3 meters. The flowering period lasts 2 months with a gradual development of the flowers. Vanilla flowers, white or yellowish, are large and striking, with a delicate texture, in contrast to its leaves which are thick and durable. At the end of flowering the flowers turn into fruits that look like green beans. The ripening period of the fruit lasts 9 months. As long as the fruit goes through the stage of hardening and drying
it changes color and develops the enzymatic processes that lead to the birth of the characteristic aroma and taste.
History of Vanilla
The first people to domesticate vanilla were the Aztecs of the coast of Mexico, who considered the plant sacred since they believed it was a gift from the gods. For many years flowers decorated temples and were placed at the entrance of the house to bring good luck.
Afterwards, vanilla began to enter various drinks made by the people of the region and in 1500 vanilla traveled to Europe for the first time, bound for Spain. There begins its exploitation in food production for its aroma and taste.
The well-known Bourbon vanilla, which is widely available on the market, got its name in the early 19th century from the homonymous island that produced it.
The cost of vanilla ranks among the highest in the world, second only to saffron.
