Chocolate cake with dates and coconut sugar
To reduce the sugar content, we will use dates and banana. Coconut sugar is a healthy substitute for white and brown sugar. Its taste is reminiscent of caramel and roasted nuts.
For a large mold we will need:
- 1 1/2 cups wholemeal flour
- 2 cups white all-purpose flour
- 2 large dates
- 1/2 cup sunflower oil
- 1 cup coconut sugar
- 1 glass of freshly squeezed orange juice
- 6 tbsp cocoa
- 1 sachet of baking powder
- 2-3 saffron stamens
- makhlebi powder
- cinnamon
- carnation
- vanilla
- a little salt
Execution:
Pour the sunflower oil, sugar and dates (chopped) into the mixer and start mixing all the ingredients well. Then in a bowl put the flour, cocoa and aromatic spices, saffron, makhlebi, cinnamon, cloves, vanilla, salt, baking powder and mix well by hand continuously in one direction. Continue mixing well by gradually adding the orange juice. Immediately afterwards, pour the material into the mixer along with the oil and sugar and work it at medium speed until the mixture takes on the appropriate pulp and form.
Then pour the mixture into a greased and floured pan and bake in a preheated oven at 180°C for 45-50 minutes.
