Almond bouquets with Saffron & Cranberries

What could be more enjoyable than drinking your coffee while eating fluffy almond bites!!!
The dessert we will make today is reminiscent of oriental notes, since the unique aroma of saffron and its strong flavor takes us to the depths of Asia!!!
Cranberries and ginger add a sweet and sour touch to the tongue game, as for cardamom ...... lifts the spirit along with the body.
To achieve the fluffy result we will use coconut and almond flour, while the sweetener will again be coconut for those who want to replace it brown sugar in their sweets.

Let's take a detailed look at the materials we will need:
Quantity 20 bites - preparation time 15'
-2 cups almond flour
-3 tbsp coconut flour
-20 saffron stamens – Kozani saffron
-1/2 tsp cardamom powder
-1/3 cup almond milk (unsweetened)
-3⁄4 cup coconut sugar
-2 tbsp cranberries
-1/2 ginger
-1 tsp Himalayan salt
-1 tbsp coconut oil

Friday:
1. First, heat the almond milk and after removing it from the heat, pour inside the saffron stamens and leave it for a few minutes until the its color, taste and aroma.
2. Mix in a bowl, the almond and coconut flour, the cardamom powder, the ginger, Himalayan salt.
3. Then add the sugar, coconut oil and after
mix well, add the almond milk with the saffron and cranberries.
4. If the dough is quite stiff, add a little more warm almond milk until it is we can mold it in our hand without it sticking. We start to mold the mixture into round balls and place them in a container with a lid.
5. Our bites are ready to eat!!! For best results, add the container is refrigerated for 2 hours.

Almond bites are gluten free and can be enjoyed by both young and old.
They enhance our breakfast or afternoon snack with good fats, essential amino acids antioxidants and vitamins. Store in the refrigerator. Combine ideally with green tea, coffee or fresh fruit juice.
